Best Ever Brownies

Prep Time: 10 minutes
Cook Time: 27-32 minutes

Makes: 16 brownies

Ingredients

  • 1¼ cups granulated sugar (or coconut sugar for Paleo)

  • 3 eggs

  • ¾ cup melted unsalted butter (or melted coconut oil for dairy free)

  • 1¼ cups blanched almond flour

  • ⅔ cup Dutch-processed cocoa powder

  • 1 tsp vanilla extract

  • 1 tbsp instant espresso powder

  • ½ cup chocolate chips + extra for topping

  • ½ cup chopped walnuts or pecans

  • Pinch of sea salt (optional)

Instructions

  1. Preheat oven to 350°F and line an 8x8 metal pan with parchment paper — ⚠️ metal is critical here, glass or ceramic will not cook these the same way

  2. Whisk sugar and eggs vigorously for 2 minutes until light and frothy

  3. Add remaining ingredients except chocolate chips and nuts, stir to combine

  4. Fold in chocolate chips — batter will be slightly thicker than traditional brownie batter

  5. Pour into pan and sprinkle extra chocolate chips on top

  6. Bake 27 minutes for fudgy, 32 minutes for chewy — toothpick should come out with moist crumbs, not wet batter

  7. Cool completely before slicing

Store covered at room temperature up to 3 days or freeze up to 1 month.
