Best Ever Brownies

Makes: 16 brownies
Ingredients

1¼ cups granulated sugar (or coconut sugar for Paleo)

3 eggs

¾ cup melted unsalted butter (or melted coconut oil for dairy free)

1¼ cups blanched almond flour

⅔ cup Dutch-processed cocoa powder

1 tsp vanilla extract
-
1 tbsp instant espresso powder

½ cup chocolate chips + extra for topping

½ cup chopped walnuts or pecans

Pinch of sea salt (optional)
Instructions

Preheat oven to 350°F and line an 8x8 metal pan with parchment paper — ⚠️ metal is critical here, glass or ceramic will not cook these the same way

Whisk sugar and eggs vigorously for 2 minutes until light and frothy

Add remaining ingredients except chocolate chips and nuts, stir to combine

Fold in chocolate chips — batter will be slightly thicker than traditional brownie batter

Pour into pan and sprinkle extra chocolate chips on top

Bake 27 minutes for fudgy, 32 minutes for chewy — toothpick should come out with moist crumbs, not wet batter

Cool completely before slicing
Store covered at room temperature up to 3 days or freeze up to 1 month.
